Lemon Bars

Crust

6 tablespoons of butter (room temperature)

1 cup of flour

1/4 cup of powdered sugar

2 tablespoons of corn starch

Filling

3 large eggs

1/3 cup of fresh lemon juice (about 3 lemons)

1 tablespoon of vanilla extract

2 tablespoons of flour

1 cup of powdered sugar

For the crust mix all of the ingredients into a large mixing bowl use a fork to mix the ingredients, mix for about 3-5 minutes until the mixture is no longer (fine) it should be a little lumpy.

Line a 8x8 baking dish with parchment paper and pour in the crust mixture, flatten it down nice and packed with your hands or a spatula. Bake on 350 for 20 minutes.

Mix all of the ingredients for the filling, using a whisk, be sure to not over whisk to prevent over bubbling. Pour the mixture over the crust and bake for another 20 minutes. Once done let it sit for an hour. Sprinkle with powdered sugar.
