Strawberry 7 Up Pound Cake
Disclaimer! I am not a baker; this was the first cake I learned how to bake, the ingredients are minimal making this an easy recipe for my beginners and anyone else that just wants to try give it a try.
Cooking Process
It is very very very! Important that all of your ingredients are room temperature before mixing. Grease and flour your Bundt pan and set it to the side. Cut the leafy part off of your strawberries and smash them with a fork, set those to the side. Next thing you want to do is mix your butter until it’s smooth, then add in your sugar. Mix these 2 ingredients together for about 6 minutes its tiresome but it’s necessary. Add in your eggs one at a time, mixing the batter after every egg. Once you’re done with that, add in your vanilla and lemon extract. Mix in 1/2 of your flour and salt mixture, once it’s mixed together add in the remaining and continue to mix until it’s a creamy consistency. Add in your 7 up and strawberries (these are optional) mix well. Bake on 325 for 1 hour and 15 minutes. Poke your cake with a toothpick, making sure it comes out clean. That means it’s done baking. Let your cake sit for 15 minutes and then transfer to a cooling rack. I do not like icing or glaze on on my cake- weird I know but feel free to glaze your cake with the ingredients below.
Ingredients:
3 cups of granulated sugar
3 sticks of unsalted butter
3 cups of all purpose flour
12 strawberries
5 eggs
1 cup of 7 up soda
1 teaspoon of vanilla extract
1 teaspoon of lemon extract
1/2 teaspoon of salt
* Make sure your butter, eggs and 7 up soda is at room temperature*
Glaze mixture
1 cup of powdered sugar
2 tablespoons of 7 up
1 teaspoon of vanilla extract
1 teaspoon of lemon juice
